Veggie Pie

Ingredients (use vegan versions):

2 or 3 cups of zucchini
1/2 cup of oil
1/2 cup of water
1/2cup of flax seed (soaked overnight),grind and use in place of eggs
2 or 3 gloves of garlic
1 onion (grated)
salt and pepper
1 cup of Betty Crocker Bisquick whole wheat Baking Mix
1/2 cup of vegan soy parmesan

Directions:

Mix wet then dry ingredients, do not over mix, pour into 9 cake pan and bake @350 degrees for about an hour or more (test with toothpick) insert in center of pie and if toothpick comes out clean its done! Enjoy! This pie can be made with spinach and vegan soy cheese, broccoli and cauliflower, be creative. Liz
